Drinks and Cocktails

Try Brown County Winery wine in a new cocktail or specialty drink!

  • -2 parts Sangria

    -1 part Fruit juice (orange, pineapple, etc)

    -1 part sparkling water (lemon, lime, etc.)

    -Frozen blueberries and strawberries

    Mix Sangria and fruit juice together in a pitcher. Put frozen fruit in the serving glass (or fill with ice). Pour wine mixture in serving glass 2/3 full. Top glass with sparkling water and garnish with fresh fruit.

  • Mix 1 part Chateau Gnaw Bone Black Raspberry and 2 parts Chocolate ice cream and blend well. Garnish with shaved chocolate if desired.

    • 1 Bottle Vista Red or Cranberry Apple or Apple Wine

    • 4 Brown County Winery Spice bags

    • 1/2 - 3/4 cup brown sugar

    • 1/2 cup water

    Pour one bottle of wine in a crock pot. Add 4 spice bags, brown sugar, and water. Reduce or add brown sugar amount as desired. Heat on low until warmed but do not boil. Keep leftovers in a jar in the fridge.

    • 2 oz of Rye Whiskey

    • 1 oz Old Barrel port

    • Few dashes of bitters

    Add ice to cocktail shaker. Add ingredients and stir with spoon. Strain into a chilled glass. Garnish with a lemon, orange or grapefruit twist.

    • 1 1/2 oz of gin

    • 3/4 oz of lemon juice

    • 3/4 oz of Chateau Gnaw Bone Black Raspberry

    • Champagne or Sparkling Wine (Brut/dry)

    Add gin, lemon juice, and Black Raspberry cordial to a cocktail shaker with ice and shake to combine. Pour into a champagne flute and top with champagne. Garnish with a lemon twist.

    • 4 parts Brown County Winery Plum Wine

    • 1 part Simple Syrup

    • 1 part Lime Juice

    • Sparkling Water (lime flavored if desired)

      Mix together plum wine, simple syrup, and lime juice in a pitcher. Pour mixture into glasses with ice and top with sparkling water. Garnish with a lime wedge.

Desserts

Our wines can enhance a classic dessert or start as a base for a new creation.

  • This is delicious and easy! Prepare a box of brownie mix and instead of water use the equivalent amount of Old Barrel Port. Bake according to directions.

  • For the Cake

    • 1 box of white cake mix

    • 1, 3 oz. box of Blackberry Jello (or appropriate fruit)

    • 3/4 cup vegetable oil

    • 1 cup Brown County Winery Blackberry or Strawberry Wine

    • 4 eggs

    • 1 cup pecans

    For the Glaze

    • 1/2 stick of butter

    • 1/2 cup Blackberry or Strawberry Wine

    • 1 cup if powdered sugar

    Grease and flour 2 loaf pans or one bundt pan. Line the bottom of the pans with half of the nuts. Mix the rest of the ingredients and pour over the nuts. Bake at 350 degrees for 50 – 60 minutes.

    Make the glaze by melting the btter of low heat. Add the wine and the sugar mix until a glaze forms.

    Poke holes in the cake with a toothpick and pour the glaze over the cake as soon as it is removed from the oven. Cool and serve.

Entrees

Use our wines to create flavorful sauces for savory dishes.

  • Use this sauce to top pork tenderloins sliced into medallions.

    • 1/2 Cup Old Barrel Port

    • 2 tbs Blackberry Jam (or other fruit)

    • 1 tbs melted butter

    • 1 tbs Dijon mustard

    • Salt and pepper to taste

    Combine sauce ingredients and reduce over low heat. Pour over pork and serve.

  • Use this sauce as an alternative to tomato and cream pasta sauces.

    • 2 tbs Butter

    • 2 cloves of garlic

    • Salt and pepper to taste

    • Thyme

    • 1/2 cup white wine (Autumn White, Vignoles, Vidal Blanc)

    Melt butter in a pan and lightly sauté garlic. Add wine and stir to combine. Add thyme, salt, and pepper (or any other herbs as needed) and reduce mixture to desired consistency. Toss cooked pasta in the pan with the sauce. Serve as a side or top with veggies, seafood, or hard cheese.
